I think all you do is you soak the mat in water overnight, then take it out, roll it up like a rug and tie it on both ends. Then you can cut through it with your sword.

almost, roll it first, put on 5 ties, soak in water for about 15hrs.

if I recall traditionally, they used the decapitated bodies of prisoners hung up like scarecrows, but with one arm above them - the last test for the sword & swordsman was the lopping off of the hand... I think there were around ten/twelve cuts meant to be made in total. And yes bamboo would be really hard to cut through if it was kept soaked... as would any fairly densely fibered wood.
